Try our ‘chuck it all in’ rainbow slaw

Coleslaw isn’t just for cabbage. Our recipe makes use of all those bits languishing in your vegetable drawer and turns them into a tasty crunchy dish.

Grate or shred carrots, beetroot, courgettes, apples, celery, onions and peppers and toss with red wine vinegar, mayo or yoghurt.

Now that load of veg you were going to throw in the bin has transformed into a salad that’s delicious enough to eat on its own, or as the perfect side to grilled chicken or pork.
