What could be lovelier on a Sunday than a roast with all the trimmings?
But while half of Brits rate it as their favourite meal as the weather gets chillier, nearly 2 million Sunday roasts are wasted every month in the UK, according to research by Sainsbury’s.
And it isn’t just the meat that often ends up in the bin. The supermarket found that we throw away double the amount of veg (27 per cent) compared to meat, at 13 per cent.
Try chopping leftover roast chicken or pork into a salad with couscous and any last spoonfuls of veg, or save tender slices of beef from the bin for a sandwich loaded with tomatoes, leafy greens and horseradish.
Mix the veggies with grains for a simple supper, mix with white sauce and top with cheesy breadcrumbs for a gratin, or throw in one of these winter salads.
