The big freeze

If you’d rather store your surplus pasta until a later date, drain all excess water and seal in ziplock bags ready to defrost when you need it. Al dente pasta defrosts better than soft cooked (which has a tendency to go mushy). And if you plan to defrost in a microwave, then try to freeze your pasta flat so it thaws out evenly without scorched bits.
